Miraculin is a taste-modifying protein discovered in the red berries of Synsepalum dulcificum. While miraculin isn't inherently sweet, when it comes into contact with the human tongue, it temporarily transforms typically sour foods, like citrus, into a sweet taste that can last for up to 2 hours. This effect is achieved as miraculin binds to the sweet receptor cells on the tongue, inhibiting the perception of sour tastes by the brain.
